Whole Wheat Carrot Date Muffins

Carrot date muffins are one of the most amazing muffins I have made so far. My child has a sweet tooth. If I don’t keep a healthy sweet option at home, he will end up eating chocolate or candies. When I was making these carrot and date muffins, I wasn’t really sure about the outcome. The results got awarded when my husband, who does not like to eat sweets, ate two muffins. The icing on the cake was the compliment on the perfect balance of sweetness. And the secret is that I extracted mostly from the dates and carrots and used very little sugar.


Servings: 9 Preparation time:
  • Wheat Flour, Whole-grain, Whole Wheat Flour 1 cup
  • Carrots, Raw, Grated Carrot 1 cup
  • Dates Puree ½ cup
  • Canola Oil, Vegetable Oil, Cooking Oil 1/3 cup
  • Milk, Producer, Warm, hot Milk ½ cup
  • Refined Sugar 1/3 cup
  • Cinnamon, Ground, Cinamon, Dalchini, Cinnamon Powder, Cinnamon Sticks Cinnamon Powder ¼ tsp
  • Baking Soda, Powder, Cooking Soda, Sodium Bicarbonate, Soda Bi-carb Baking Powder ½ tsp
  • Baking Soda, Powder, Cooking Soda, Sodium Bicarbonate, Soda Bi-carb Baking Soda ½ tsp
  • Salt, Common Salt, Rock Salt, Table Salt Salt ¼ tsp

Instructions (Preparation Steps):

  • First thing first, collect all the ingredients together.
  • To make date puree, soak 10-12 dates in lukewarm water for 30 minutes. Drain the water and grind the soaked dates to a smooth paste.
  • In a bowl, mix milk, date puree and oil.
  • Add grated carrots, cinnamon powder and sugar. Mix well.
  • Sift wheat flour, baking powder, baking soda and salt altogether.
  • Gently fold all the dry ingredients into wet ingredients and make a smooth batter.
  • Put muffin liners in a muffin tray and fill up to ¾.
  • Meanwhile preheat the oven at 180 degree Celsius for 10 minutes.
  • Bake these muffins in a preheated oven at 180 degree Celsius for 25 minutes.
  • Once done take out these muffins and let them cool.
  • Healthy Whole wheat carrot date muffins are ready to serve.

Cook's Tip:
1 cup heavy cream can be replaced by 1 cup evaporated milk OR ¾ cup milk with 1/3 cup of butter.
Whole cinnamon sticks gives a spicy aroma to food. Whole sticks are used and later removed. Ground cinnamon are normally used in baking.
To allow salt to pour easily, put a few uncooked grains of rice in your shakers to absorb moisture
