Ingredients:
  • Eggplant, Raw, Egg Plant 1 eggplant (cut into large pieces)
  • Rice, White, Short-grain, Raw, Plain 1 1/2 cup raw rice, (washed and cooked such that the grains of rice remain seperate)
  • Peppers, Hot Chili, Red, Raw, Red Chilies, Chillies, Dry Red Chillies, Chilly 5 red chillies
  • Kali Mirch Black Peppercorn, Milagu,kurumulaku, peppers 6 peppercorns
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder 1/2 tsp turmeric
  • Ghee, 4 tbsp ghee(clarified butter)
  • Cloves, Ground, Clove, Lavang 4 cloves
  • Salt, Common Salt, Rock Salt, Table Salt Salt to taste
  • Urad Dal, White, Urad Dhall, Urad Dhal 1 tsp urad dal
  • Cinnamon, Ground, Cinamon, Dalchini, Cinnamon Powder, Cinnamon Sticks 1piece cinnamon
  • Coriander Seeds, Hara Dhaniya 1 1/2 tsp coriander seeds
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed 1/2 tsp cumin seeds
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly 2 green chillies
  • Chickpeas, Garbanzo Beans, Bengalgram, Mature Seeds, Raw, Channa, Kabuli Chana Dal, Chana Dal, Gram Dhal 1 tsp channa dal
  • Mustard Seed, Ground, Sarson, Mustered,mustard Seed Powder 1/2 tsp mustard seeds
  • Canola Oil, Vegetable Oil, Cooking 1 tsp oil (for frying the masala)
  • Buttermilk, 1/2 cup (sour) buttermilk (or)
  • Lemon Juice, Raw, Lime Juice, Lemon Juice 2 tsp lemon juice

Instructions (Preparation Steps):

  • Fry in the 1 tsp oil 4 out of 5 red chillies, turmeric,cloves,
  • cinammon, cumin, coriander and peppercorns.
  • Powder them using a coffee grinder and set aside.
  • Heat the ghee in a pan and add the mustard seeds, red chilli,
  • green chillies, urad dal and channa dal.
  • When the seasoning is almost done, add the brinjal pieces
  • and fry till the brinjal is done.
  • Now add the buttermilk and mix well.
  • Add the powdered masala and mix.
  • Add salt to taste.
  • Bring to a boil and remove.
  • Mix this with the cooked rice and heat through.
  • Serve hot.

Cook's Tip:
While cooking rice for pulao or biryani add 2 cups of water in 1 cup of Rice.Cook in pressure cooker for 1 whistle. open the cooker after 5min & then take out the rice to big thali & sprincle some water over it & saparate the rice with wait hands to avoid sticking of rice to hand.

If you cook Indian food, you are bound to get turmeric stains on your clothes at one time or another. The good news is they're really easy to take out. Wash the stained clothes/kitchen linen immedeately in cool water and soap. Dry in the sun and the stain will fade to a very pale pink. Wash the article again and the stain will be gone!
