Tawa rice , a famous street food of Maharashtra, India, is a delicious rice preparation made over the big hot iron griddle (tawa ) and commonly served by the Pav bhaji stalls . It is called tawa rice /pulav as it is prepared on the same tawa on which pav bhaji is prepared. It is the one street food that can be enjoyed as lunch also. Usually leftover rice are used to make this dish and the main ingredient in this recipe is the butter and Pav Bhaji Masala. With lots of veggies , spices and butter , this is a dish to be worth try. When I prepared it for the first time , hubby and daughter both loved it and now it is cooked occasionally in my house . So let’s start the recipe .yum


Servings: 4 Preparation time:
  • Rice, White, Long-grain, Precooked Or Instant, Enriched, Dry, Boiled Rice 4 cups Boiled rice
  • Onions, Raw, Onion 2 onion , finely chopped
  • Ginger Root, Raw, Fresh Ginger 1 teaspoon ginger ,grated
  • Garlic, Raw, Garlic flakes, Lahsun, grated garlic, Garlic pods 4-5 cloves garlic , grated
  • Tomatoes, Red, Ripe, Raw, Red Tomato 3 tomatoes , chopped
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly 4 green chillies , chopped
  • Peas, Green, Raw, 1/2 cup green peas
  • Carrots, Baby, Raw, 1 carrot , diced
  • Beans, Snap, Green, Raw, Green Beans 1/2 cup green beans , chopped
  • Peppers, Sweet, Green, Raw, Capsicum, Bell Pepper 1 capsicum , chopped
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed 1 teaspoon Cumin seeds
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder 1 teaspoon turmeric powder
  • 2 tablespoon pav bhaji masala
  • Red Chili Powder, Paprika, Deggi Mirch, Red Chilli Powder, Red Chilly, Red Ch 1 teaspoon Red chilli powder
  • Salt, Common Salt, Rock Salt, Table Salt Salt to taste
  • Coriander Leaf Corriander, Cilantro Leaves, Green, Leaves, Parsley Leaves, Coriander 1/4 cup Fresh coriander leaves,chopped
  • Lemon Juice, Raw, Lime Juice, Lemon Juice 2 tablespoon Lemon juice
  • Butter, 1/2 cup butter (+ 1 tablespoon vegetable oil)
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated Water as required

Instructions (Preparation Steps):

  • Heat butter and oil in wide pan or wok or large skillet. Add cumin seeds and cook for 1 minute.
  • Add grated ginger , garlic and chopped onion , green chillies and sauté till lightly browned.
  • Add chopped vegetables , salt and tomatoes.
  • Add 1/2 cup of water and cook on low to medium heat till veggies are slightly tender. Frequent stirring is required.
  • Add turmeric powder , pav bhaji masala and red chilli powder.Mix and cook for two to three minutes.
  • Add the rice and give a nice stir . Add coriander leaves and lemon juice and mix well. Cook on high heat for a couple of minutes.
  • Serve hot with salad and Raita.

Cook's Tip:
Avoid the use of butter. If it is essential to use, use a butter containing low saturated fat or with plant stanols (which avoid absorption of cholesterol by our body) or similar substitutes.
Always warm dry spices like cumin seeds, cardamom, cloves, etc. on a griddle before powdering. They will grind faster and the powder will be finer.
If you cook Indian food, you are bound to get turmeric stains on your clothes at one time or another. The good news is they're really easy to take out. Wash the stained clothes/kitchen linen immediately in cool water and soap. Dry in the sun and the stain will fade to a very pale pink. Wash the article again and the stain will be gone!
