Sweet Potato Halwa

  • Sweet Potato Leaves, Raw, Sweet Potato 1 kg.
  • Brown Sugar, Sugar 1 cup
  • Milk, Producer, Warm, hot Milk 2 cups
  • Ghee, Ghee 1 cup
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Roasted cashew nuts 1tbsp [Chopped]
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi Cardamom Powder 1 tsp.

Instructions (Preparation Steps):

  • 1. Boil, peel and grate the sweet potato.
  • 2. Heat the ghee in a shallow pan and fry the grated sweet potato.
  • 3. In another pan heat the milk and sugar add the fried sweet potato.
  • 4. Cook on medium heat stirring all the time till the mixture leaves the sides of the pan.
  • 5. Remove into serving bowl, garnish with the cashew nuts, serve warm

Cook's Tip:
Use a wooden spatula to stir dishes like halwa, etc. while cooking, to avoid scratching of utensils. Besides it will be easier on the hands too.
Add cardamom peels to the tea canister, instead of throwing them away. It will lend a very subtle flavour of cardamom to every cup of tea you brew!
Add a slice of lemon to peeled sweet potatoes while cooking. The lemon will help them clear and free of discoloration.

    I prepared this recipe for fun and it ends up to become one of my favorite sweet dish and important part is that my wife loved it too ;-)
