Sweet Potato Halwa

  • Sweet Potato Leaves, Raw, Sweet Potato 1 kg.
  • Brown Sugar, Sugar 1 cup
  • Milk, Producer, Warm, hot Milk 2 cups
  • Ghee, Ghee 1 cup
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Roasted cashew nuts 1tbsp [Chopped]
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi Cardamom Powder 1 tsp.

Instructions (Preparation Steps):

  • 1. Boil, peel and grate the sweet potato.
  • 2. Heat the ghee in a shallow pan and fry the grated sweet potato.
  • 3. In another pan heat the milk and sugar add the fried sweet potato.
  • 4. Cook on medium heat stirring all the time till the mixture leaves the sides of the pan.
  • 5. Remove into serving bowl, garnish with the cashew nuts, serve warm

Cook's Tip:
Keep grated potatoes in cold water to prevent them from getting discoloured. When required, drain, press out excess water and dab on a clean kitchen towel. Use immediately.
milk from spilling Milk will not spill while boiling if one applies glycerine to the rim of the vessel.
Add cardamom peels to the tea canister, instead of throwing them away. It will lend a very subtle flavour of cardamom to every cup of tea you brew!

    I prepared this recipe for fun and it ends up to become one of my favorite sweet dish and important part is that my wife loved it too ;-)
