Foremost thing before starting Indian cooking is the setting up of the Indian spice kitchen. With a lot of Indian spices available in the market, this video details about picking the right spices for your kitchen. Few things you should consider before buying the Indian spices are where to buy them (Indian grocery places like Patel brothers, Apna bazaar or online websites like Amazon) and the next important thing is how much do I buy. Smaller quantity like 7 oz is advisable to keep the spice fresh but if you buy larger quantity (14 oz and above), make sure you transfer the contents to airtight container and store it in cool dry place. For setting up your spice kitchen you need a Spice box or Masala dabba (Hindi). Most of the Spice boxes sold in market are stainless steel and are round in shape. The spice box has seven small containers in it for seven essential spices. Most of the North Indian dishes can be made with these seven spices

  • Salt, Common Salt, Rock Salt, Table Salt Salt
  • Cumin seeds or Jeera.
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder Turmeric powder.
  • Garam Masala Powder, NITU DIDIs garam masala powder Garam masala powder
  • Dhania Powder , Coriander Powder, Corriander Powder, NITU DIDIS CORIANDER POWDER, Coriander Pd Coriander powder.
  • Red Chili Powder, Paprika, Deggi Mirch, Red Chilli Powder, Red Chilly, Red Ch Red chili powder
  • Kala namak or Black salt

Instructions (Preparation Steps):

  • Spice Box Contains:
  • 1. Salt
  • 2. Cumin seeds or Jeera. They are tiny seeds, beige in color. They should be added to hot oil and allowed to sizzle and brown. They lend warm, nutty aromatic flavor to the dish and thus they are essential spice used in Indian cooking
  • 3. Turmeric powder. It’s a bright yellow powder. It should be used sparingly in the dishes. It has medicinal properties like fighting cancer and Alzheimer disease.
  • 4. Garam masala powder- Garam means hot (Hindi) and masala means Mixture of spices (Hindi). Garam masala powder is mixture of several spices like coriander, cumin, bay leaf etc. When used in right proportions they give excellent flavor to the dish.
  • 5. Coriander powder. They are powdered form of dry coriander seeds. They lend slight lemony flavor to the dish.
  • 6. Red chili powder They add heat and flavor to the dish. Use it sparingly according to your spice level. They are available in Indian grocery store as powdered form.
  • 7. Kala namak or Black salt- Kala namak has a distinctive taste. It is used in chutneys, raitas, provides the tangy fresh flavor in chaat and many other snacks.

Cook's Tip:
Sometimes cooking requires a lot of pre-preparation. Make masalas ahead of the time. Stock the masala in the freezer till not required for cooking. This method will save a lot of time
