Ingredients:
  • Mung Beans, Mature Seeds, Raw, Yellow, Moong, Dal, Dhal 1 cup dal (cooked)
  • Carrots, Baby, Raw, 1 carrot (chopped)
  • Beans, French, Mature Seeds, Raw, Green Bean, Runner Bean 1tbsp French beans (chopped)
  • Eggplant, Raw, Egg Plant 1eggplant (cut into pieces)
  • Onions, Raw, Onions 1tsp onion (chopped)
  • Tomatoes, Red, Ripe, Raw, Red Tomato 1 tomato (chopped)
  • Coriander Seeds, Hara Dhaniya 1tbsp coriander seeds
  • Peppers, Hot Chili, Red, Raw, Red Chilies, Chillies, Dry Red Chillies, Chilly 4 red chilies (dry)
  • Onions, Raw, Onions ½ onions (chopped)
  • Fenugreek Seed, Kasuri Methi, Kasoori Methi Dried, Menthya, Vendayam, Menthulu,uluva 1tsp methi seeds
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed 1tsp cumin seeds
  • Kali Mirch Black Peppercorn, Milagu,kurumulaku, peppers 8 black pepper (pods)
  • Tamarinds, Raw, Imli, Tamarind Paste, Tamarind, Tamarid 1tbsp tamarind extract
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder 1/2tsp turmeric powder
  • Salt, Common Salt, Rock Salt, Table Salt 1tsp salt
  • For Termpering:
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed 1tsp cumin seeds
  • Mustard Seed, Ground, Sarson, Mustered,mustard Seed Powder 1tsp mustard seeds
  • Curry Leaf, Murraya Koenigi, Karivepallai, Curry Leaves, dry curry leaves Curry leaves (few)
  • Canola Oil, Vegetable Oil, Cooking Oil

Instructions (Preparation Steps):

  • First heating up 1tsp oil on a tawa
  • Put red chilies, ½ onions, coriander seeds, methi seeds and black pepper pods
  • Keep on stirring and on a very slow flame roast the masalas
  • Fry till the onions become little soft and good aroma comes from the methi seeds
  • Now remove the roasted masalas and grind them together to a fine paste
  • Heating up the pan on oven
  • Put the cooked dal
  • Add carrot, French beans, egg plant, onions and tomatoes
  • Now add the masala paste and mix well
  • Pour little water to it
  • Add the tamarind extract and mix it well
  • Put turmeric powder and salt and mix
  • Cover the pan and cook for 15 minutes
  • The dal is cooked now
  • Remove the pan and start the tempering
  • Heating up little oil in a pan
  • Add mustard seeds, cumin seeds and curry leaves
  • Fry till the mustard seeds splutter
  • Now add the dal to the tempering
  • Mix well and cook for another 2 minutes
  • Serve it with idli, vada , dosa or rice

Cook's Tip:
Storing curry leaves for many days fresh. Pluck the leaves put it in a airtight container and keep it in fridge. It stays fresh for nearly 1 week to 10 days.

When cooking beans, any additional ingredients, such as acidic substances, such as lemon juice, vinegar, tomatoes, ketchup or wine, should be added at the end of the cooking time, since acid makes the beans firm. Store the juice cubes in a box or plastic bag in the freezer. Use them to make tomato soup, vegetable, gravies, etc. when you’re in a hurry or have run out of tomatoes
