Rajasthani Bhindi , a famous preparation of okra stuffed with gram flour and spices , a must try for all okra lovers. Okra is the most nutritious and tasty vegetable which is prepared in many ways. This is the most typical yet scrumptious method of okra preparation.So let’s start the recipe.yum


Servings: 3 Preparation time:
  • Ingredients:
  • Okra, Raw, Ladys Finger, Bhindi 250 gm okra
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly 5 green chillies
  • For stuffing:
  • 2 tablespoon gram flour
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder 1/2 teaspoon turmeric powder
  • Red Chili Powder, Paprika, Deggi Mirch, Red Chilli Powder, Red Chilly, Red Ch 1/2 teaspoon red chili powder
  • Garam Masala Powder, NITU DIDIs garam masala powder 1/2 teaspoon garam masala
  • Saunf Fennel Seed, 1/2 teaspoon fennel seeds
  • Amchur Powder, Mango Pd, Mango Powder, Amchoor Powder,dry Mango Powder, Man 1/2 teaspoon dried mango powder
  • 1/2 teaspoon Anardana powder
  • Salt, Common Salt, Rock Salt, Table Salt Salt to taste
  • Canola Oil, Vegetable Oil, Cooking 1 tablespoon vegetable oil
  • For tempering:
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed 1/2 teaspoon cumin seeds
  • Saunf Fennel Seed, 1/2 teaspoon fennel seeds
  • 1/2 teaspoon nigella seeds
  • Peppers, Hot Chili, Red, Raw, Red Chilies, Chillies, Dry Red Chillies, Chilly 2 chopped green chilly
  • Canola Oil, Vegetable Oil, Cooking 2 tablespoon vegetable oil

Instructions (Preparation Steps):

  • Wash and dry okra with kitchen towel.
  • Take all ingredients for stuffing in a bowl , stir continuously to avoid lumps.
  • Cut the heads of okra and make a slit in the center lengthwise up to tail.
  • Fill the stuffing made above in okra and green chilly.
  • Heat oil in a wok, add cumin , nigella and fennel seeds .
  • Add chopped green chillies and stuffed okra.Let it cook for 10 minutes on simmer.
  • Stir and cook on high heat or 2 minute.Remove from heat.
  • Serve with Chapati or Rice.

Cook's Tip:
Always warm dry spices like cumin seeds, cardamom, cloves, etc. on a griddle before powdering. They will grind faster and the powder will be finer.
Chewing on "saunf" makes your breath fresh and removes strong odours
To preserve the colour of turmeric Apply a little ghee to the bottom and sides of the jar before storing.
