Prune Cake With Caramel Glaze

Prune cake is a delicious coffee cake. Served with warm caramel sauce & black coffee, you would definitely go for other slice.


Servings: 4 Preparation time:
  • I:
  • Prune Juice, Canned, Prune Juice 3/4 cup Prunes (Deseed & Chopped)
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated 3/4 cup( boiling) water
  • 1 tsp coffee granules
  • Baking Soda, Powder, Cooking Soda, Sodium Bicarbonate, Soda Bi-carb 3/4 tsp Soda Bi Carb
  • II:
  • Corn Flour, Maize Flour, Whole-grain, White, Cornflour 3/4 cup( self raising) flour
  • Brown Sugar, 1 cup (+ 1/4 cup brown) sugar
  • Butter, 1/2 cup (melted) butter
  • Egg, Whole, Raw, Anda 3 egg
  • Vanilla Extract, Vanilla Essence 1 tsp vanilla extract
  • Salt, Common Salt, Rock Salt, Table Salt (pinch of )salt
  • III:
  • Caramel sauce (to serve)

Instructions (Preparation Steps):

  • In a bowl add the chopped prunes. Pour over boiling water, coffee & soda bicarb.Give a quick stir and keep aside for 10 minutes. Later puree it in grinder.
  • Preheat the oven at 160°C. Grease an 8 inch tin.
  • In a separate bowl mix together eggs, melted butter,brown sugar, vanilla extract and salt
  • Now add the self raising flour and mix till combined
  • Add in the prunes puree and mix.
  • Pour in a greased tin and bake for 40 to 45 minutes until done.
  • Cool completely & cut in desired sizes.
  • Serve with a drizzle of Caramel sauce.

Cook's Tip:
Avoid the use of butter. If it is essential to use, use a butter containing low saturated fat or with plant stanols (which avoid absorption of cholesterol by our body) or similar substitutes.
Before beating raw eggs,rinse the container with water.The mixture will not stick to the sides of the vessel.
To prevent formation of ice, rub table salt to the insides of your freezer.
