Aloo tamatar ki subzi is a classic combination and the most popular curry of North India.This is amongst the easiest and most delicious recipe to make with a combo of potatoes and tomatoes.This is made on all festive occasion as well as a daily quick fix curry. It goes very well with pooris, Bedvi , Daal poori , but you can serve it with any Indian bread.You can also make this for fasting as it is made without using onion and garlic like all my recipes

 

Servings: 3 Preparation time:
Ingredients:
  • Potato, Flesh And Skin, Raw, aloo Potato (aloo, boiled) - 4 (450 gms)
  • Tomatoes, Red, Ripe, Raw, Red Tomato Tomato (tamatar ,chopped) -350 gms
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly Green chilies (hari mirch ,chopped )- 1 tsp
  • Coriander Leaf Corriander, Cilantro Leaves, Green, Leaves, Parsley Leaves, Coriander (Fresh) coriander,(chopped)- 2 tbsp
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder Turmeric powder (haldi) -3/4 tsp
  • Red Chili Powder, Paprika, Deggi Mirch, Red Chilli Powder, Red Chilly, Red Ch Chili powder (lal mirch) - 1.5 tsp
  • Dhania Powder , Coriander Powder, Corriander Powder, NITU DIDIS CORIANDER POWDER, Coriander Pd Coriander powder (dhaniya) - 1tsp
  • Brown Sugar, Sugar (chini)- 1 tsp
  • Salt, Common Salt, Rock Salt, Table Salt Salt (namak)- to taste
  • Temering /waghar/tadka:
  • Canola Oil, Vegetable Oil, Cooking (Cooking) oil (Tel) - 1.5 tbsp
  • Ghee, (Clarified butter) ghee - 1.5 tbsp
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed Cumin seeds (jeera) - 1 tsp
  • Hing, Asafoetida, Asafetida, Hingu, Ingua,perungayam, Asaefotida, Asafetida powder Asafoetida (hing) -1/4 tsp
  • Curry Leaf, Murraya Koenigi, Karivepallai, Curry Leaves, dry curry leaves Curry leaves(kadi patta) - 10
  • Peppers, Hot Chili, Red, Raw, Red Chilies, Chillies, Dry Red Chillies, Chilly (Whole) red chilies,(dried) - 4
  • Red Chili Powder, Paprika, Deggi Mirch, Red Chilli Powder, Red Chilly, Red Ch (Kashmiri) red chili powder - 1/2 tsp

Instructions (Preparation Steps):

  • Peel and coarsely mash boiled potatoes.(don't make a paste)
  • Grind chopped tomatoes and green chilies in the mixer and make a fine and smooth paste.
  • Take a pan and add mashed potatoes and the ground tomato paste.
  • Add all the dry spices, few curry leaves and 2 .5 cups of water in the pan.
  • Mix well and let it cook on medium heat for about 7-8 minutes or till it thicken slightly.
  • Now heat oil and ghee in a small pan.
  • Add cumin seeds ,when seeds become golden in color add asafoetida ,curry leaves and whole red chilies.
  • Switch off the flame and after 2-3 seconds add the kashmiri mirch powder in the tempering.
  • Now pour the tempering over the boiling gravy.
  • Switch off the flame and add chopped coriander in the curry.
  • Cover with a lid and wait for 5 minutes so it will absorb all the flavors.
  • Serve hot.
  • Serving suggestions-serve with poori ,paratha or any bread.
  • NOTE-
  • You can add little more or less water in the curry according to the consistency you want to have in the curry .
  • Can also add some boiled peas at step -3

Cook's Tip:
Always warm dry spices like cumin seeds, cardamom, cloves, etc. on a griddle before powdering. They will grind faster and the powder will be finer.

If you cook Indian food, you are bound to get turmeric stains on your clothes at one time or another. The good news is they're really easy to take out. Wash the stained clothes/kitchen linen immediately in cool water and soap. Dry in the sun and the stain will fade to a very pale pink. Wash the article again and the stain will be gone!

To keep salt from becoming lumpy in moist climate, add a dash of rice flour to it. Add a few rice grains in the salt shaker.
