Pan as in arabi in hindi(Colocasia tuber) can be cooked in many ways...in manipur we make pan ironba...pan thongba and various other dishes but this one is my fav.Cooked with smoked shrimps(fresh water shrimps) and hawaijar. Another mouth watering manipuri dish.

Servings: 3 Preparation time:
Ingredients:
  • 200 gms pan/colocasia tuber
  • 100 gms hawaijar (dried)
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli 8-10 green chillies
  • 2 inch long ginger
  • Onions, Raw, Onions 1 onion
  • Spring Onions, Green, 4-5 spring onion
  • Turmeric, Ground,powder, Haldi, Nitu Didi turmeric powder 1/2 tbsp turmeric powder
  • Ngari
  • Prawn, Shrimp 50 gms shrimps

Instructions (Preparation Steps):

  • Peel the pan and cut into round slices, ensure that its not very thick. Slit the chillies and chop the onions.
  • Take a pressure cooker and add abt 2 cups of water, turmeric powder, some ngari,hawaijar and all the ingredients.
  • Cook for about 3-4 whistles (max)
  • Once it cools down, cook on medium flame, add shrimps and salt.
  • Cook for 10 mins on medium flame and serve with rice.

Cook's Tip:
Remove the stems of green chilies while storing them. This will help them to stay fresh for long.

Have a square pan, but need a round one? An 8-inch square pan can be substituted for a 9-inch round one.
