Pal Payasam/Semiya Payasam is a sweet and delicious Indian kheer recipe prepared with vermicelli/semiya cooked in condensed milk, sweetened with sugar, flavourd with cardamom and garnished with sauted nuts and raisins. Semiya payasam is a most popular dessert served along with south Indian meals in restaurants, hotels and wedding lunches. Ingredients:
  • Milk, Producer, Warm, hot Milk 1600 ml
  • Vermicelli, Vermicelli 100 gm
  • Brown Sugar, Sugar 60 gm
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Cashew nuts 2 tbsp
  • Raisins, Seedless, Raisins Raisins 1 tbsp
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi Cardamom powder 1/2 tsp
  • Ghee, Ghee 10 ml

Instructions (Preparation Steps):

  • Boil milk in a thick bottomed pan and keep in slow fire till it reduces to three-quarters of its original quantity.
  • Heat 5 ml ghee in a kadai and saute vermicelli till it turns light brown in color.
  • Add roasted vermicelli to the boiling milk and cook in a slow fire till the vermicelli is done.
  • Add sugar, cardamom powder and cook in slow fire for a minute.
  • Saute the cashew nuts and raisins in the remaining ghee and garnish it over the payasam/kheer.
  • Serve hot or cold as a dessert.

Cook's Tip:
To prevent ants from attacking nuts, place a black peppercorn in the container.

Out of brown sugar? You can substitute 1 cup for 1 cup white sugar and ¼ cup molasses. Just reduce the other liquids in the recipe by about ¼ cup.
