Palak Pulao / Spinach Pulao is a one pot meal. Served with plain buttermilk Palak Pulao is packed with nutrients and serves as delicious meal in a hurry.


Servings: 2 Preparation time:
  • 1 Glass rice
  • Spinach, Raw, Spinach Leaves, Palak, Leafy Greens 1 bunch spinach
  • Onions, Raw, Onion 1 (large) onion (chopped)
  • Coriander Leaf Corriander, Cilantro Leaves, Green, Leaves, Parsley Leaves, Coriander 1/3 cup coriander leaves
  • 2 green chillies + 3 extra
  • Ginger Garlic Paste, 1 tbsp garlic paste (5-6 garlic cloves)
  • Ginger Paste, Puree, 1 tbsp ginger paste ( 1 1/2'' ginger)
  • Yogurt, Plain, Low Fat, Curd, yoghurt 2 tbsp curd
  • Pepper, Black Powder, Pippali, Ground Pepper 1/2 tsp black pepper powder
  • Garam Masala Powder, NITU DIDIs garam masala powder 1/2 tsp garam masala powder
  • Garam Masala Powder, NITU DIDIs garam masala powder Whole garam masala (Shahjeera,cloves,black pepper, cinnamon,black cardamon,Bay leaves)
  • 1 big spoon oil + 1 tsp ghee (opt)
  • 1 & 1/2 tsp Salt to taste
  • 1 & 1/2 glass of water

Instructions (Preparation Steps):

  • Blend all together : coriander leaves, 2 green chillies, garlic paste, ginger paste, curd
  • For Spinach:Take 1 tbsp oil in a pan. Add 1/2 chopped onion. when it becomes transparent, add the spinach.Cook on medium heat till spinach changes its color.Cool & ground to paste.
  • Heat oil in a deep pan or pressure cooker. When oil is hot, add whole garam masala.
  • When garam masala crackles, add the remaining chopped onion.
  • When onion becomes light brown, add the Coriander paste. Fry it for 2 minutes
  • Add black pepper powder & garam masala powder.
  • Add spinach paste
  • Now add slit 3 whole green chillies.
  • Add the water and salt.
  • When water comes to a boil, add rice.
  • Pressure cook on high flame till 3 whistles and then on simmer on low heat for 10-15 minutes.
  • Serve hot with curd raita.

Cook's Tip:
Leftover Ground Beef: shepherd’s pie, tacos, taco salad, stuffed peppers or add to macaroni and cheese.
Rub hands with dry salt to remove onion and garlic odor.
Add pinch of sugar when making spinach vegetable. This will remain spinach greenish not turning to black.
