Ingredients:
  • Milk, Buttermilk, Dried, Khoya Khoya [Solidfied Milk] ½ cup
  • Cottage Cheese, Lowfat, 2%, Cottage Cheese 1 cup
  • Self Rising Flour, Self raising flour Self Raising flour 2 tbsp
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Roasted cashew nuts 2 tsp [Finely Chopped]
  • Raisins, Seedless, Raisins Raisins 2 tsp.
  • Brown Sugar, Sugar 3 cups
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated Water 1.5 cup
  • Saffron, NITU DIDI PURE SAFFRON , Kesari Powder, Kesar Saffron ½ tsp. (soaked in 2 tsp. of warm water)
  • Canola Oil, Vegetable Oil, Cooking Oil (or Ghee for frying) ½ kg.

Instructions (Preparation Steps):

  • 1Make a one string sugar syrup, with the sugar and water, add the saffron, keep aside.
  • 2 Knead the khoya , cottage cheese and the self raising flour to a smooth dough, make medium size balls, about the size of a walnut, stuff a few pieces of cashew nut and one raisin in each ball and seal well.
  • 3.Fry these balls ,few at a time in medium hot ghee or oil,until they turn dark brown in colour,remove,drain well and immerse in the sugar syrup, soak for 8 hours, remove onto a plate and garnish with crushed almonds or cashew nuts.

Cook's Tip:
to avoid oil stains in clothes, better rub the place where there is oil stains with lemon dipped in salt n then wash with soap..the oil stains will disappear

It will be easier to chop raisins if you sprinkle some flour over them so that they do not stick. Then cut with a small kitchen scissors.

Homemade cottage cheese will remain fresh longer if you wrap it in blotting paper before refrigerating.
