Ingredients:
  • Milk, Buttermilk, Dried, Khoya Khoya [Solidfied Milk] ½ cup
  • Cottage Cheese, Lowfat, 2%, Cottage Cheese 1 cup
  • Self Rising Flour, Self raising flour Self Raising flour 2 tbsp
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Roasted cashew nuts 2 tsp [Finely Chopped]
  • Raisins, Seedless, Raisins Raisins 2 tsp.
  • Brown Sugar, Sugar 3 cups
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated Water 1.5 cup
  • Saffron, NITU DIDI PURE SAFFRON , Kesari Powder, Kesar Saffron ½ tsp. (soaked in 2 tsp. of warm water)
  • Canola Oil, Vegetable Oil, Cooking Oil (or Ghee for frying) ½ kg.

Instructions (Preparation Steps):

  • 1Make a one string sugar syrup, with the sugar and water, add the saffron, keep aside.
  • 2 Knead the khoya , cottage cheese and the self raising flour to a smooth dough, make medium size balls, about the size of a walnut, stuff a few pieces of cashew nut and one raisin in each ball and seal well.
  • 3.Fry these balls ,few at a time in medium hot ghee or oil,until they turn dark brown in colour,remove,drain well and immerse in the sugar syrup, soak for 8 hours, remove onto a plate and garnish with crushed almonds or cashew nuts.

Cook's Tip:
First rinse raisins, dates and figs in very cold water before putting them through the food chopper. They will not form such a gummy mass.

Saffron is available in threads (whole stigmas) and ground, your best bet is to go with the threads. Not only will they retain their flavor longer, but you will also be assured you have purchased pure saffron. Powdered saffron is not as strong, tends to lose flavor, and is also easily adulterated with fillers and imitations.

When frying vegetables, add them in a hot pan with little oil and then spray some on top of the vegetables. This way you can avoid using excess oil

Place a large jug filled with hot detergent water on the kitchen platform so that large knives, forks, spoons, spatulas, etc. can be put straight into the jug after use. Thus they will require only a quick rinse before use again.
