Servings: 4 Preparation time:
  • Basmati Rice, Basmathi Rice 1.5 Cups Basmati (or Jeeraga Samba) Rice
  • Onions, Raw, Onion 1 Onion( Medium /Roughly Chopped)
  • Onions, Raw, Onion 1 Onion( Large/ Sliced)
  • Ginger Paste, Puree, 1/2 Tbsp Ginger Paste
  • Ginger Garlic Paste, 1/2 Tbsp Garlic Paste

  • Bay Leaf, Tej Patta 1 Bay leaf
  • Cloves, Ground, Clove, Lavang 4 Cloves
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi 3 Cardamoms
  • Cinnamon, Ground, Cinamon, Dalchini, Cinnamon Powder, Cinnamon Sticks 2( Inch Sticks) Cinnamon
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly 3 Slit Green Chilies
  • Cashew Nuts Raw, Kaju, Cashewnuts 10 (to 15) Cashews
  • Raisins, Seedless, Raisins 10 Raisins
  • Coconut Milk Thick, 2 Cups Coconut milk
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated 1 Cup(Warm )Water
  • Ghee, 2 Tbsp Ghee
  • Canola Oil, Vegetable Oil, Cooking 1 Tbsp Oil
  • Brown Sugar, 1 Tsp Sugar
  • Salt, Common Salt, Rock Salt, Table Salt Salt as per taste

Instructions (Preparation Steps):

  • Wash the rice thrice. Soak the rice in water for 10 minutes before preparing the onion masala.
  • Heat a pressure pan on medium flame.
  • Add ghee and oil once the oil smokes place on low flame fry the cashews on low flame for a minute.
  • Add raisins and fry for 30 seconds.
  • Drain the cashews and raisins reserve on a plate.
  • In the same oil fry the spices bayleaf, cinnamon, cardamom and cloves for 30 seconds.
  • Add the onions slit green chilies and ginger, garlic paste fry until the onion turns transparent.
  • Once the onion turns transparent drain and add the rice fry the rice in onion masala for a minute and add the coconut milk and warm water stir well.
  • Add salt and sugar stir and cover the cooker, place whistle and cook on high flame for 3 whistles.
  • Heat oil in a wok, deep fry the sliced onion until it turns golden brown in color drain and reserve on tissue paper.
  • Once the rice is cooked mix well garnish with fried onions, cashews and raisins,serve hot...Enjoy😋

Cook's Tip:
While storing the excess dough in the refrigerator coat it with a light layer of ghee or oil. This shall prevent the dough from getting dry.
While cooking cabbage, add a bay leaf. This will reduce the smell during cooking and also give a subtle flavor.
Add cardamom peels to the tea canister, instead of throwing them away. It will lend a very subtle flavour of cardamom to every cup of tea you brew!
