I don’t remember the source for this recipe but its really an easy to make , delicious rice variety.I usually prepare this for my husband’s lunch box .Tastes great with simple onion raita..So here we go ,

 

Servings: 1 Preparation time:
Ingredients:
  • Basmati Rice, Basmathi Rice Basmati rice – 1/2 cup
  • Water Boiled Plain Raw Mineral, Hot, Warm Cold, Mix, sparkling, Carbonated Water –( 3/4 - 1 cup /Little less than 1 cup )
  • Vegetables Peas And Carrots, Mixed Vegetables Vegetables (Carrot , beans , peas and potato )– 1 cup (chopped )
  • Green Chillies, Chilies, Hot Chili, Green, Raw, Chilli, Chilly Green chili - 1 no (slit cut )
  • Ginger Root, Raw, Fresh Ginger Ginger – 1piece (1 inch size /Chopped finely )
  • Garlic, Raw, Garlic flakes, Lahsun, grated garlic, Garlic pods Garlic flakes – 5 ( –do-)
  • Onions, Raw, Onion (Big) onion –1 no (-do-)
  • Cinnamon, Ground, Cinamon, Dalchini, Cinnamon Powder, Cinnamon Sticks Cinnamon – 1stick (small)
  • Cloves, Ground, Clove, Lavang Cloves – 2 nos
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi Cardamom – 1 no
  • Bay Leaf, Tej Patta Bay leaf – 1(small leaf)
  • Cumin Seed, Shahi Jeera, Nitu Didi cumin seed Jeera – 1/4 tsp (optional)
  • Canola Oil, Vegetable Oil, Cooking Oil – 2 tbsp
  • Ghee, Ghee – 2 tsp
  • Cashew Nuts Dry Roasted, Without Salt Added, Kaju, Fried Roasted cashew – (to garnish)

Instructions (Preparation Steps):

  • Wash and chop all the veggies and set aside.
  • Wash and soak the rice in water.(i soaked for 15 mins)Do not drain the water.
  • In a broad kadai , add oil , jeera and the spices in the same order.
  • Add the ginger , garlic pieces ..saute well and then add the finely chopped onions .Saute till it becomes transparent.
  • Finally add the chopped vegetables and the required salt.
  • Mix well and add the rice with soaked water.(the water should be less than 1 cup )
  • Transfer everything into a cooker and add 2 tsp of ghee to it.
  • Cover and Cook for 1 whistle.
  • Serve hot with raita !!

Cook's Tip:
to avoid oil stains in clothes, better rub the place where there is oil stains with lemon dipped in salt n then wash with soap..the oil stains will disappear

whenver u buy onions..keep the onions in the fridgge and when u have to use them take them out from the fridge and cut them....u will have no tears.

Never discard water in which vegetables are cooked, use it in gravies, soups, rasam or kolumbu.

Use kitchen scissors To chop fresh mint, chilies and coriander finely and without any mess.

Rinse uncooked rice in a sieve under a cold running tap before cooking; this removes excess starch
