Aamras -puri -is flavoured mango pulp that is enjoyed best with deep fried puffed bread called puri


Servings: 2 Preparation time:
  • Mangos, Raw, Mango pulp Mangoes (Alphonso / Kesar) 2(-3 ripe and sweet, good quality)
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi Cardamom powder ½ tsp
  • Saffron, NITU DIDI PURE SAFFRON , Kesari Powder, Kesar Saffron( a large pinch)

Instructions (Preparation Steps):

  • Wash and peel the mangoes. Cut it into chunks.
  • In a blender, blend the mango chunks into pulp together with cardamom powder.
  • Stir in the saffron.
  • Give a nice stir, pour it into individual bowl and chill it for at least half an hour.
  • Serve aamras chilled with poori.
  • Notes:
  • Wait for the right season to enjoy the aamras. Use very ripe and sweet mangoes to make this aamras. Preferably with alphonso and kesar variety. Use only pulpy variety and not fibrous ones. If you get only fibrous variety, then you have to strain the aamras before serving.

Cook's Tip:
Always warm dry spices like cumin seeds, cardamom, cloves, etc. on a griddle before powdering. They will grind faster and the powder will be finer.
If you dont have Saffron use a small amount of Turmeric instead.
Here is a healthy tip for you all ... While preparing. Mango poriyal slightly we can add neem flowers so that even diabetic patients can have sweet mango poriyal
